The Three-Pan System
Bottom Pan — Water Reservoir

Middle Pan — Juice Collector
Collects juice flowing down from the fruit basket via a central cone. Juice exits through a side spout with a silicone tube and clamp for direct bottle filling.
Top Pan — Perforated Fruit Basket
Holds prepared fruit. Steam rises through the perforations, breaks up fruit cells and releases juice which flows downward into the collector below.
Glass Lid
Seals the system to retain steam and heat, maximising extraction efficiency and keeping the process contained and clean.
The Extraction Process
- Water in the lower pot boils, producing steam that rises upward through the system.
- Steam penetrates the cut fruit in the perforated colander, breaking up cell walls.
- Released juice flows downward into the juice-collecting middle pan.
- Juice accumulates at approximately 80°C, undergoing natural pasteurisation.

Step-by-Step Instructions
- Carefully wash your fruit or vegetables and remove all stems, cores and seeds.
- Place prepared fruit into the perforated colander, keeping it below the steam-hole level.
- Fill the bottom water pot with water and place it on your cooktop.
- Stack the juice-collecting middle pot on top, then place the filled colander on top.
- Cover with the glass lid and heat over medium heat.
- Steam will extract juice from the fruit, which drips into the juice-collecting pot below.
- Use the silicone tube and clamp to fill your bottles directly from the heat.
