The lovely ladies from CWA Urunga are regular customers at Ozfarmer.
We were lucky to be on the receiving end of delicious gifts when Lynda stopped by to collect their order. Its always nice to catch up with the latest preserving adventures, hearing about what fruit or vegetable they've absolutely had enough of and what is ahead as each growing season leads into the next.
They have kindly shared a few recipes with is.
This one is a hit with warehouse staff because its easy to make and ready to eat straight away.

Caramelised Onion Relish
1kg Brown onions, sliced
2 tablespoons Olive Oil
⅓ cup Brown Sugar
⅓ cup Balsamic Vinegar
1 tsp Sea Salt
Black Pepper, cracked
Heat the Olive Oil in a heavy based pot over medium heat, add the onions & cook for 10-15 mins, stirring frequently until the onion is soft.
Reduce the heat to low, add the sugar & balsamic vinegar, season with sea salt & pepper & cook for 15 mins or until the onions are caramelised & the sauce thick.
Store in sterilised jars, enjoy straight away!
Tips:

Use sterilised jars before filling to ensure food safety.

Choose a size based on how quickly you'll use the relish after opening (smaller for occasional use, larger for frequent use).

If you plan to water bath can the relish for shelf storage, use jars rated for canning.
